Cuisinaire du Roi - Chiboust orange tart

The Parisian pastry chef Auguste Julien Chiboust was based on rue St Honoré. In 1840, he gave his name not only to the marvellous St Honoré, but also to its very special cream, Chiboust cream or chibouste, which garnishes the centre of the St Honoré.

This cream is a highly successful combination of a crème pâtissière and an Italian meringue. The result is a very light mousse, contrary to what you might think. But to add a little freshness, we'll add a few orange zests.
And to round it all off, we traditionally lightly caramelise the cream before serving.
